Josephine Eau de Vie

Joséphine is not aged, but rested with toasted wood, giving it a slightly smoky flavor, similar to cognac, but with different complexities and flavor notes due to the molasses and various fruits in the mash. The profile is of a lovely brandy but also with spice and smoky notes found in a fine Scotch, and then rounds out with earthy notes and a magnificent mouthfeel. As the spirit opens, it changes flavor profile, and as the spirit ages, even in bottles, it changes character and deepens in complexity.
